If I play a Multi maneuver and my opponent plays 2 reversals that have extra text on them like say for instance Back Rake and You Bring the A%$, We'll Bring the Whoopin'!:
Back Rake
Reverse any Strike or Grapple and end your opponent's turn. If the first card played on your next turn is a Strike or Submission, it cannot be reversed.
You Bring the A%$, We'll Bring the Whoopin'!
If played from your hand, reverse any maneuver and end your opponent's turn. Draw 1 card. On your next turn, your opponent cannot reverse cards from his arsenal.
If he plays both reversals, on his next turn would the text of both cards apply? If he were to only play 1 reversal, for example, if he only played the Back Rake but my Multi maneuver was still successful, would the text of Back Rake still apply on his next turn even though he didn't completely reverse my maneuver?

Yes to both. The text of all reversals to a Multi are applied in order, since you play one reversal, apply text, deal damage, and then get the opportunity to play another. EXCEPTION: an effect that tries to move the reversed card (Piper's Pit, Chained Heat on a Heat card, I Gotta Say, Out of Play, <REVOLUTION> My Way, etc.) will fail if it is the first reversal to a Multi. The rest of the reversal's text will proceed as normal.
